LE CIRQUE
For over a quarter century, Le Cirque has remained the gustatory temple at the
epicenter of New York's social, business and power dining scenes. Ringmaster
Sirio Maccioni, long recognized as the "world's most charismatic restaurateur,"
brought his Four-Star culinary magic to the Las Vegas Strip with the opening of
Bellagio. Perched astride an eight-acre lake filled with dancing fountains, Le
Cirque is a whimsical jewel box of color and detail, from the star-studded entry
of polished woods to the sumptuous, swooping silk-tented ceiling. Executive Chef
Marc Poidevin matches the animated surroundings with vibrant French cookery that
is by turns rustic and elegant: Braised Rabbit in Riesling with Spaetzle, Fava
Beans and Wild Mushrooms; Roasted Chicken in Black Truffle Skin with Roasted
Potatoes and Lobster Salad "Le Cirque" with Black Truffle Dressing. Le Cirque is
the proud recipient of the AAA Five Diamond Award for 2004.
CIRCO
The younger and more casual sibling of the legendary Le Cirque, Osteria del
Circo is a bold, bustling highwire act where oven-fired Tuscan cuisine takes
center-stage. With playful interiors created by Adam Tihany, this sophisticated
three-ring circus crackles with energy, from the gleam of the open kitchen to
the Busby-Berkley chorus line of fountains soaring skyward outside. Beyond the
lighthearted décor, the menu is decidedly serious - a blend of the Maccioni
matriarch Egidiana's traditional home cooking and seasonal, ingredient-driven
cuisine. The spirited menu veers from lusty appetizers and pastas to rotisserie
dishes and beef and seafood entrées. Pastry Chef Gregory Gourreau's irresistible
desserts have been acclaimed as “Best in Las Vegas” by LasVegas Life Magazine.
NECTAR
A startling, bold restaurant and bar dedicated to pleasures of the palate,
NECTAR is filled with fantastic columns, plush jewel-toned furnishings and
whimsical lighting. Chef John Schenk's menu reads like an ode to Americana, with
big and bold renditions of Spit-Roasted Prime Rib of Beef, Buffalo Mahi-Mahi
with Hush Puppies, Chili-Rubbed Free-Range Pork Chops and a masterful
Surf-and-Turf. At the adjoining Nectar Lounge, cocktail nation and imagination
collide in an otherworldly setting. Here friends greet and meet over a wickedly
inventive cocktail and seafood menu. Perhaps Las Vegas Life Magazine said it
best: "this is a Nectar the gods would be proud of!" Come drink it all in!
PRIME STEAKHOUSE
Superstar Chef Jean-Georges Vongerichten raises steakhouse dining to new heights
at PRIME, located at lakeside with views of the fountains and lights of Las
Vegas. Brimming with Baccarat chandeliers, plush furnishings and gilt galore,
PRIME evokes the charms of a luxurious 1930s-style speakeasy. The wine cellar is
deep with great California reds and first growth Bordeaux, and the adjoining
outdoor patio is a lovely setting for hand-crafted cocktails and cigars. Named
"Best Steakhouse in Las Vegas" by Las Vegas Life Magazine, PRIME may well be the
grandest, most romantic steakhouse on earth! Indeed Travel & Leisure Magazine

PICASSO
Soaring cove ceilings, intimate nooks and great bursts of flowers make Picasso a
dream of country elegance. Here, master Chef Julian Serrano's
French-Mediterranean cuisine takes flight in a room that boasts an awesome
profusion of original Picasso oils and ceramics. The first Las Vegas chef to be
honored with the James Beard Award for "Best Chef, Southwest," Serrano showcases
his ingredient-driven, seasonal cuisine in two masterful menus: a four-course
tasting menu and a five-course Chef's Degustation. Picasso is the proud
recipient of the AAA Five Diamond Award of Excellence for 2002, 2003 and 2004.
In addition, surveyors in the 2002 Zagat Las Vegas Restaurant Survey voted
Picasso "Most Popular Restaurant" in Las Vegas.
AQUA
Set in the Conservatory & Botanical Gardens and offering views of shimmering
pools, AQUA radiates luxury. Michael Mina and Charles Condy's acclaimed San
Francisco restaurant showcases contemporary seafood with continental flair.
Awash in soft neutral tones, polished rare woods and sprays of fresh flowers,
the room brims with sophisticated modern charm. Specialties include Aqua Caviar
Parfait, Tartare of Ahi Tuna with Scotch Bonnet Chile Oil, Miso-Glazed Chilean
Sea Bass and Lobster Potpie. Voted No. 1, "Tops for Food" by surveyors in the
2002 Zagat Las Vegas Restaurant Guide Survey.
NOODLES
From the expansive display of noodle-filled apothecary jars to the lavish use of
gilt and polished marble, designer Tony Chi's striking design for Noodles is
sleek, modern and inspired. Chart your own culinary journey of the Far East with
authentic noodle, rice and congee specialties from Thailand, Japan, China, and
Vietnam, as well as Hong Kong-style barbecue specialties.
JASMINE
With its sparkling chandeliers, miles of pastel chintz and colorful bursts of
flowers, Jasmine is a room built for romance. Chef Philip Lo, an originator of
nouvelle Hong Kong cuisine, creates contemporary and classic Cantonese, Szechuan
and Hunan dishes, as well as live seafood specialties. Specialties include Maine
Lobster Dumplings with Ginger Sauce; Minced Squab in Lettuce Petals; Crystal
Florida Stone Crab Claws; Garlic Beef Tenderloin, and Imperial Peking Duck.
Surrounded on three sides by gorgeous lake and garden views, Jasmine also
features music synchronized to the soaring fountains of Bellagio.
OLIVES
Renowned Chef Todd English brings the robust flavors of his Boston-based
restaurant to Las Vegas at this lively, spirited Mediterranean bistro. Vibrant
mosaic tiles, whimsical lighting and charming café seating fill the space, where
a curved wall of windows opens onto stunning views of the lake and its dancing
fountains. The inventive menu of flatbread pizzas, housemade pastas, rotisserie
dishes and flame-licked seafood and meats reads like a tour of the Riviera
coastline. Conveniently located in the Via Bellagio, Olives is the perfect
setting for a late lunch or early supper between browsing the boutiques. The
intimate outdoor patio offers al fresco dining, weather permitting.
SHINTARO
Authentic sushi, teppan yaki and pan-Asian tasting menus are but a few of the
pleasures and treasures that await at Shintaro. This sleek, California-inspired
dining room boasts expansive views of the fountains of Bellagio and lights of
Las Vegas. All manners of tempuras, teriyakis and grilled dishes are featured on
the contemporary menu. At the teppan yaki tables, diners can experience a live
theatre of cooking, with master chefs preparing multi-course dinners right
before their eyes. The popular sushi bar is highlighted by a dramatic,
kaleidoscopic display of live jellyfish. A large selection of Japanese beers and
sakes are always offered.
