CRAFTSTEAK
To say that Craftsteak merely creates extraordinary steaks would do the restaurant a great disservice. James Beard award-winning chef Tom Colicchio is emphatic when it comes to creating menu items that appeal to all lovers of fine food. Using the purest ingredients and a philosophy that simple is better, he makes every dish burst forth with flavor and deserving of its fine reputation. The entrees aren't the specialties here. The whole menu is.

FIAMMA TRATTORIA
Straight from SOHO, where it earne d the coveted Three Star designation from the New York Times, Fiamma is among the newest restaurants to open at the MGM Grand. Sleek, sexy and sophisticated, the James Beard award nominated trattoria features signature dishes and hearty pastas that reflect the simple seasonings and flavor s of Italy.

NOBHILL
No fog. No hills. No earthquakes. Just delightful San Francisco neighborhood-inspired cuisine elevated to an art form by the mastery of James Beard award-winning chef Michael Mina. The organic produce and poultry are flown in directly from San Francisco and provide the foundation for creating extraordinary tastes. The North Beach Cioppino and the Lobster Pot Pie are renowned for raising eyebrowns and smiles.

PEARL
Cuisine with essence of the Canton and Shangai provinces, prepared utilizing the four Chinese cooking methods: steamed, baked, brased and fried. Live seafood is the specialty. Chef Kai-Wai Yau prefers a menu that constantly changes so he can take advantage of the rare and unique seasonal offerings. The atmosphere is serene and contemporary Chinese. A masterpiece both in looks and taste.

SEABLUE
Hook, line and savor! James Beard award-winning chef Michael Mina's newest restaurant is Seablue, inspired by the bustling ports and marketplaces of the Mediterranean. Fish and shellfish are flown in from around the world daily and prepared in two lively open show kitchens. The menu features tapas and small plates ideal for family-style sharing ; custome-designed salads; innovative seafood entrees and and jet-fresh whole fish cooked over a wood-fired grill. The stylish room is filled with sea-centric details, from the walls of stone and water to a dramatic cylindrical tank filled with over 1,000 fish . Ocean-fresh is the focus here, so let your tastebuds go for a swim.

EMERIL'S
Scallops from Maine. Pike from the Mid-West. Chicken from Alabama. Emeril's creates its own fresh and distinct blend of Creole/Cajun cuisine as good as you'll taste in any French Quarter restaurant. Add to that a wine list that received Wine Spectator's 1999 "Best Award of Excellence" and a New Orleans-style architecture, and you'll see why Emeril's is much closer to Bourbon Street than it is to the Vegas Strip.

MARK MILLER'S GRILL ROOM
Hand-painted coyotes, lizards and other Southwestern motifs provide the setting for an authentic Santa Fe-style feast. Start off with a fresh fruit margarita or select from a wine list that received the 1999 "Award of Excellence" by Wine Spectator. Then, using a pinch of spice and a dash of creativity, Mark Miller, receipient of James Beard's "Best Chef in the Southwest" award, will bedazzel your plate with one of his many Southwestern masterpieces.

WOLFGANG PUCK
Few chefs do pizza like Wolfgang Puck does pizza. The restaurant itself is pizza-like, with a circular shape and brightly colored mosaic tiled booths. The aroma floating to your table from the kitchen will prepare your appetite for the array of tasty Italian cuisine and pizzeria delights. There's also other great options, including Roasted Pumpkin Ravioli or Oven Roasted Snapper. One taste and you will realize his reputation goes into every bit.

GRAND WOK
A culinary cross-section of Chinese, Japanese, Thai, Korean and Vietnamese, the Gran Wok is the place to dine when your cravings for Asian cannot be ignored. With an open Sushi Bar and kitchen, bamboo floors accented in black granite, and a private glass-walled dining area with waterfall, an evening here will give your palate a lesson on the finer points of Asian cuisine.

COYOTE CAFE
The tastiest South-of-the Border-influenced cuisine this far north of the border. Adjacent to Mark Miller's Grill Room, this cafe is more informal in appearance, but not in taste. Open for breakfast, lunch and dinner. healthy portions are the staple. Choose from a menu of signature dishes like Blue Corn Pancakes, Cascabel Barbecue Duck Quesadilla and Chile-rubbed Shrimp Diablo. All Southwestern delights.

STUDIO CAFE
When you need a place to eat any time of the day, head to the Studio Cafe. Open 24 hours, this casual dining spot serves breakfast, lunch, and dinner. The after-hours menu is one of a kind, with new gourmet dishes such as flatbread pizzas, Turkey Ciabatta and Mediteranean Braised Salmon. Got a late-night craving? The Studio Cafe won't disappoint you.

RAINFOREST CAFE
Dine at a table surrounded with vegetation, cool mists, cascading waterfalls and creatures indigenous to the rain forest. Thunderstorms will crash overhead. And fish watching is a must with the 10,000 gallon double archway saltwater aquarium. Try the Prime Steak, or the Rumble in the Jungle Turkey Pita. The Rainforest Cafe is part adventure, part restaurant and wholly entertaining.

MGM GRAND BUFFET
Open every day for breakfast, lunch and dinner, the key to this buffet is to plan ahead. Enjoy the dinner buffet featuring items like crab legs, rack of lamb, turkey carved to order and prime rib. There is also an extensive salad bar for veggie lovers and an appetite-satisfying assortment of desserts for those with a sweet tooth. Champagne brunches are served on weekends, and feature items like blueberry blinzes, do-it-yourself omelettes and delectable desserts.

CABANA GRILL
A quaint food stand you'd expect to come across on a tropical island, the Cabana Grill seasonal cafe is located outdoors, amidst the lush landscaped Grand Pool area. Start the day with freshly made breakfast poolside. Choose from omelettes, pancakes, bagels, fruit, juices and more. The lunch menu consists of more casual items such as Avocado Turkey Croissant, Southwestern Chicken Salad, brick-oven pizzas and nachos. Delectable finger foods for poolside indulgences.
